Pink peppers, grown in Madagascar, aren't really peppers. They are berries with a sweet peppery flavor. The French have used pink peppercorns for hundreds of years in desserts such as Floating Island Custards, as well as in patƃ¶ùs, sausage seasonings and savory dishes. Now we all use then in various fish, meat, vegetable, and salad dishes. Pink peppercorns are useful for color as well as taste.
